A few highlights from the long weekend!
Thursday
- Getting El Famous and watching a movie with Steven (Bombshell).
Friday
- Feeling much better on my Friday run than I did on my Wednesday one.
- Talking to my mom while running.
- Making a yummy breakfast when I got back from running.
- Hanging outside in the hammock with the cats and texting with Gina and my snis (separately).
- A nap.
- A virtual workout with Anne.
Saturday
- Trying a new fake meat (bacon) product with breakfast.
- Grilling! We made potatoes, asparagus, corn, zucchini, and Beyond Burgers. It was nice to sit outside for a few hours and enjoy the decent weather.
- Being lazy the rest of the day (Homeland, a short nap, reading).
Sunday
- Seeing people I knew on my run (they were riding their bikes).
- More weeding. (I had to put that on here so you’d see I did something productive.)
- More hammock time with the cats.
- More deck time with Steven.
- Starting the final season of Homeland.
- Alfredo pasta for dinner (my fave!).
- Finishing an amazing book.
Monday
- Sleeping in.
- A walk at the local forest preserve.
- A nap.
- Root beer floats on the deck with Steven.
- Watching A Beautiful Day in the Neighborhood with Steven.
- Lasagna for dinner.
Lowlights
- A bad night of sleep.
- Some anxiety.
I came so close to having my first Beyond Burger this weekend! They were on sale at Jewel, but we really wanted burgers with cheese built in, and unsurprisingly Beyond Burgers don’t come with cheese built in (at least the ones at Jewel didn’t), so we got regular cheeseburgers instead. Hopefully soon, though! I’ve been so curious about them for a long time and really want to try them. Your grill out looks DELICIOUS!
You will have to let me know when you try them! I really like them, and am excited Impossible is going to be available to buy in stores soon too (before only restaurants could buy them). Did you guys grill out too?

We did! Just the burgers, though. We only have a George Foreman, so space is quite limited. When we want grilled veggies, it takes for.ev.er. due to the space constraints.
I believe it! Even with a regular size grill outside we didn’t have enough space and had to put the potatoes in the oven while everything else cooked.
Ooh, root beer floats and grilling sound so fun and summery! (We’re going to try to grill tonight. I wish we were together so you and Steven could show me how it’s done…especially making sure the potatoes aren’t RAW POTATOES!)

Root beer floats on the deck feels like a prime summertime activity! Yay! I am soooo excited for my mom to move into her house so I can partake in grilling out again. My stepdad loves to do it but they’ve been living in apartments so haven’t been able to. Grill food is the BEST.

They were so good! Ooo, and when do they move again?! I am more excited about that pool but the grilling will be nice. He can grill while you swim! Ha!

Oh, I thought you referenced fake bacon above… sorry! Haven’t tried the beyond burger but do want to. They get good reviews!
We tried a fake bacon that was really good a few weeks ago but has the shortest shelf life ever so I don’t think we’ll be getting it again. I am guessing you haven’t found one you like yet?
I really like the Beyond Burger! I know people who hate it and say it’s too realistic!
Oh, bummer. I’ve tried the Morningstar Farms option in the past… and I know people make their own from tempeh, but I’m not that talented. I guess we keep looking!
I’ve heard that about the Beyond and Impossible burgers, too. On the other hand, they may entice my dad to completely give up beef, so… silver lining to it being too “realistic”!
Oh my gosh. This comment showed up in my email as being on my recent Weekend Highlights post and that’s why I was confused about the bacon comment! I’m so sorry! I did mention bacon in that post! Geesh I’m an ass. That was the not very shelf stable one. It was made out of mushrooms. I can’t remember what it was – my husband owns Fake Meats and it was a sample someone sent him.
How’s the Morningstar one? I don’t think I’ve tried it! I’ve made Beyond Burgers for my dad and he liked them!
