Today is Steven’s birthday! Happy birthday, Steven!
I attempted to make him a cake from a(n accidentally) vegan box mix. I subbed out vegan eggs for the egg whites.
It turned out great!

Buah ha ha ha. My snis just had a construction themed birthday party for William and she suggested I put a toy digger back there and make it in to a themed cake. Ha!
I was 50% sure this would happen. This particular egg replacer makes the cake too fluffy and it doesn’t hold together. So half of the cake stayed in the pan when I was done baking.
I was all “I will use frosting as glue!” And I did! As much as I could. But the back of the cake was too far gone.
At least the front looks okay, right? And it tastes good.
Ugh, speaking of the stove, the kittens will NOT stay off it. We lock the control panel, but can hear it beeping when they jump up there and step on it.
Last night, we were in lying in bed and heard the oven beeping. About ten minutes later, I thought I could smell that the gas had turned on.
Yep, they had turned it on to 350°. Maybe they wanted to make Steven a new cake?! How thoughtful!

But I bet it tasted great! My vegan fail for the day, was that I put sweetened condensed milk in the homemade Bailey’s I made. I was trying to make a vegan version for my cousin and got almond cream for it, but then totally spaced and put the sweetened condensed milk in it, which made it not vegan at all. oops. More for me I guess!
It did!
Oh no! Ha ha. It’s super easy to do stuff like that, especially with something where you have to swap out more than one thing. More for you, indeed!!! Hee hee!

can you put something they don’t like on the cooker? The thought of them randomly turning on the gas at night is scary!
I wonder! Maybe some of that sour apple spray. It IS scary! Luckily we hear it… when we are here!
As long as the cake tastes good, I think that’s all that matters. I’d rather have a falling-apart delicious cake than a pretty, not-tasty cake!
Oh MAN. That would FREAK. ME. OUT. about the cats turning on the oven! Gas ranges freak me out enough as it is–gas in general freaks me out enough as it is–so the idea of the cats turning it on…shudders. Is there any way you can cover it up so even if they walk over it nothing would happen? Like maybe if you had a plastic lid or something you could use?
I think so too! And seriously, I’ve always been impressed with people who can make pretty cakes and cookies, but now I really am!
We actually covered it with a piece of cardboard and that has been helping. It was freaking us out as well!
AHAHA, that cake is AMAZING and very special! I laughed at the comparison of the front and back. But hey, you did a great job and made something from scratch. Frosting-as-glue is a great technique and a personal favorite of mine.
